Full Service/Canape Service

If you are planning to have a black tie or formal event this is the format you want to use.  We will provide all standard prep equipment.  Plates, Silverware and other table pieces will be priced according to the specs or specific requirements of the customer.  Plate warmers and other equipment not provided by the event facility will be rented on behalf of the client.  Wait Staff and kitchen  personnel will depend on the amount of guests, and event requirements. 

Buffet Service
One of the most popular styles of serving for weddings, corporate events and other private events.  We will provide you with all necessary equipment like chafing dishes, platters and other serving pieces.  All the set up and breakdown will be done by our personnel and the buffet will be served by our professional staff.  Our staff is dressed in formal pants, white shirt, black vest and bow tie.  The buffet and back kitchen staff is charged separately from the food cost, prices are according to the type of service requested and the amount of guests involved in your event.  All plates, silverware and napkins will be available at the buffet table with extra charges.

Drop Off Service
This service is ideal for casual events where service is not an important issue.  We will deliver your favorite dish and set it for you.  Disposable plates, disposable plastic wear, and napkins will also be provided with any meal.  You have the option to upgrade to porcelain for an additional charge.  No attendants for the buffet is provided with this service, delivery is extra. 
Teaffani catering & Events also offers you the availability to provide canopy, furniture, decor and floral arrangements  all for your convenience.There are additional fees for these services.


These suggestions are to be serve as the basics of any type of event and not the rule.  It is the ultimate privilege of the client to depict the manner in which he or her event will be customized.

The History Of "High Tea"





















Prior to the introduction of tea into Britain, the English had two main meals, breakfast and dinner. Breakfast was ale, bread, and beef.  During the middle of the eighteenth century, dinner for the upper and middle classes had shifted from noontime to an evening meal that was served at a fashionable late hour. Dinner was a long, massive meal at the end of the day.

Anna, the Duchess of Bedford (1788-1861) is credited as the creator of teatime. Because the noon meal had become skimpier, the Duchess suffered from "a sinking feeling" at about four o'clock in the afternoon. At first the Duchess had her servants sneak her a pot of tea and a few breadstuffs. 

Adopting the European tea service format, she invited friends to join her for an additional afternoon meal at five o'clock in her rooms at Belvoir Castle. The menu centered around small cakes, bread and butter sandwiches, assorted sweets, and, of course, tea. This summer practice proved so popular, the Duchess continued it when she returned to London, sending cards to her friends asking them to join her for "tea and a walking the fields." The practice of inviting friends to come for tea in the afternoon was quickly picked up by other social hostesses. 

During the second half of the Victorian Period, known as the Industrial Revolution, working families would return home tired and exhausted. The table would be set with any manner of meats, bread, butter, pickles, cheese and of course tea. None of the dainty finger sandwiches, scones and pastries of afternoon tea would have been on the menu. Because it was eaten at a high, dining table rather than the low tea tables, it was termed "high" tea. 

RECIPES

SCONES 

















Fill your home with the smell of freshly baked scones. Taste members love them and we think the Country Women's Association would approve!

Ingredients

  • plain flour, for dusting
  • 3 cups self-raising flour
  • 80g butter, cubed
  • 1 to 1 1/4 cups milk
  • jam and whipped cream, to serve

Method

  1. Preheat oven to 200°C. Lightly dust a flat baking tray with plain flour. Sift self-raising flour into a large bowl.
  2. Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.
  3. Make a well in the centre. Add 1 cup of milk. Mix with a flat-bladed knife until mixture forms a soft dough, adding more milk if required. Turn onto a lightly floured surface. Knead gently until smooth (don't knead dough too much or scones will be tough).
  4. Pat dough into a 2cm-thick round. Using a 5cm (diameter) round cutter, cut out 12 rounds. Press dough together and cut out remaining 4 rounds. Place scones onto prepared baking tray, 1cm apart. Sprinkle tops with a little plain flour. Bake for 20 to 25 minutes or until golden and well risen. Transfer to a wire rack. Serve warm with jam and cream.
CARROT GINGER TEA SANDWICHES





















This recipe comes from the Fairmont Empress Hotel in Victoria, British Columbia, Canada. A fabled Victoria landmark, The Fairmont Empress has played host to royalty, celebrities, and guests from around the world since 1908. 

Ingredients

2 grated carrots
2 tablespoons cream cheese, softened
2 tablespoons good-quality mayonnaise
1 teaspoon sweet ginger paste (optional)
Salt and pepper to taste
4 slices multi-grain bread*
4 teaspoons unsalted butter
Alfalfa sprouts


*Choose the best-quality bread as possible. Never serve end slices. Freezing the bread before cutting and then spreading makes for easier handling.

Method

In a medium bowl, combine carrots, cream cheese, mayonnaise, and ginger paste; add salt and pepper.
Spread one side of each piece of bread lightly with butter. Top the buttered side of 2 slices of bread with carrot/ginger mixture (about 1/4-inch thick). Top with alfalfa sprouts and top with the remaining bread slices, buttered side down.
Carefully cut the crusts from each sandwich with a long, sharp knife. Cut the sandwiches in half diagonally and then cut in half again. If desired, decorative shapes can be made with cookie cutters.
Yields 2 whole sandwiches or 4 halves or 8 fourths.
